Ice Cream Heaven!

One of the keys to having a great life is to create more special moments in our life.

It is through joy that we raise our vibrations, energy and ability to attract more goodness.

And what better way to create joy than through food! Ice cream is one of those universal sources of joy - the Americans even have National Ice Cream day which is coming up soon on 15th July.

Many a time when I have had friends for dinner, I have served this wonderful mango saffron ice cream which has gone down really well. It is easy to make and takes very little time.

Mango saffron ice cream:-

Ingredients:-

• Tub of vanilla ice cream
• Can of mango pulp (or the pulp from 2 large mangoes)
• Small carton of double cream
• Saffron

Method:-

Get a large mixing bowl.
Add the ice cream and mango pulp.
Mix well till consistent and the ice cream has melted a bit.
Add the double cream and mix well again.
Finally add a sprinkling of saffron and blend.
Put in large plastic tubs or serving dishes and leave in freezer till solid again.

(You could be creative and make a saffron heart as in the picture above :-) )

Leave in fridge for half an hour before serving to allow ice cream to soften.

Share and enjoy. Simply divine!
